Hello Scott,
I'm afraid I can't answer your question about the 'mini-pyramid/kite' experiment.
The only experiment in building a pyramid I know of is one carried out some years ago by a team headed by Mark Lehner - and IIRC they cheated by using modern motorised lifting gear at some point.
I'm rather puzzled by your question re the KC ceiling blocks.
I imagine that the superstructure would have been built up to the level of the top of the Chamber's walls, thus creating a rectangular hole (the KC) roughly in the centre of a vast platform approx of half the area of the base.
All that had to be done then was for the massive ceiling blocks to be manoeuvered across the 'hole'.
Allowances need to be made for the south end of the Grand Gallery, but otherwise I think this scenario most likely.
