The east-west axis is geometrically pointing to the yearly rising location of Sirius. That's an observable fact. My interpretation then is, that the temple architect intentionally chose that rotation angle to fit this Sirius location.

Yes, stars and constellations high in the sky near the celestial pole never rise/set as they are always visible in the night and rotate within 24 hours around the celestial pole. The Great Pyramid's passage to the cellar chamber is inclined towards the surface by 26°. The pyramid is located at 30°N. That means when sitting at the bottom of the passage and looking through it into the sky, your field of view will rotate in a circle 4° away (8 Moon diameter) around the celestial pole. That's some general direction, but not a precise alignment, and definitely not in the style of the otherwise precisely constructed Great Pyramid.
