As I said above, they didn't "dig". You're working from a false assumption here.

"Nobody in their right mind" is going to start digging in the middle of the pyramid when NO PYRAMID FROM THAT TIME HAD A PASSAGE IN THE MIDDLE!
They knew where they were headed, and didn't want to risk bringing the entire thing down on their heads. The only SANE way to do this was to start removing blocks along side the known passage... far enough away that they were comfortable that they wouldn't be intruding on any kind of boobytrap system.
