You are correct to not cite his first two meetings with VOldemort. In Philosopher's Stone, he didn't try kill Harry (I don't think) and in Chamber of Secrets, he probably wasn't aware that Harry was carrying a Horcrux, as that incarnation of Riddle was created prior to the accident.
Now, by the time we get to GOF, Voldy realizes Harry is too much of a threat... and that he needs to die either way. (I need to reread that confrontation scene to be sure he was intending to kill Harry, though). By book five, Phoenix, he doesn't NEED Harry any more... he's back, at full power.

It only takes one murder to split the soul. James should have sufficed... if James is dead, that is.
