I'm sure I agree with this, but I do believe the reason experiments (that work) are consistently repeatable is because the Laws of Nature are fixed.

(I allow that our UNDERSTANDING of them is subject to interpretation changes)

What your argument boils down to is that some morning gravity may cease to function, or light waves become laser intense and slay us, simply because on any give day physics doesn't have to work like it did yesterday.
