I absolutely agree with you, but has anyone ever claimed there was proof? - its a theory, if there was proof, it would be a fact.
I have never thought of the Giza layout as a "star map", and I very much doubt the AE did either. There is no evidence of any 'star cult' either, only a stellar aspect to the multi-faceted royal afterlife beliefs.
It might be a symbolic representation of the distinctive 3-star asterism in the centre of Orion, personified by Sah, the 'father of the gods', but there again, it might not, and the reasons the Giza layout resembles the star pattern, might just be for one of the reasons you outlined.
I take it seriously as an idea however - many tantalizing clues support it, but if I were to give it a rating on a scale of 1 - 10, from very unlikely to highly likely, I guess on the basis of our present state of knowledge, or perhaps ignorance, I would rate it 5 - there are just too many unknowns on this issue, so don't expect me to place any bets on it.
A word of caution. To competently assess this issue, a detailed knowledge of the sky the AE were familiar with is crucial - their night sky was different from what we see today, and also a detailed knowledge of their sacred landscape is required. Also a detailed knowledge of contemporary and near contemporary writings, plus a working knowledge of OK hieroglyphs is also essential.
