<HTML>Too simplistic. Belief is something that a person wants to believe in, be it Atlantis or a religion. It's based on a belief structure and a basis which is unverifiable and unfalsifiable.
Interpretation is based upon the currently available evidence, is verifiable, is falsifiable, and is <b>not</b> a guess.
Things reach the state os "absolute fact" in public text books when the weight of evidence is currently heavily in their favour. Should new evidence come to light which alters our theories, that in time will become reflected in our books (albeight some popular publishers take a long time to cotton on). Instead of picking on "popular books", try university archaeology textbooks and journals.
"Who critiques the critic"? Himself and other critics. It's a continuous ongoing process which is seen in the academic literature. If you don't believe me, take out a subscription to Current Anthropology.
