The documentary author answers that question: Because the meter was the original unit used by the investor or director of the Great Pyramid architecture project. But they had to or wanted to hide it to avoid it being used by the peasants. For those they created the cubit for daily use. To prove that they had the meter, they defined the cubit length based on the meter via the simple geometric sphere volume equation. It's similar to a modern cryptographic one-way hash function. With knowing the origin, here the meter and combined with the volume equation, it is really difficult to find out that they had the meter. Impossible for the peasants. When someone later claims copyright on the Great Pyramid I guess the original architect would have a good chance to win any lawsuit via this mathematical deduction.
In the video he provides another evidence that the architect had the meter, shown in a simple ratio of primary measurements of the pyramid outside. The meter, cubit and a third, forget whether phi or inch, is encoded there via simple a/b ratios of side / height lengths of the outer surfaces.
