I am by no means a tailoring expert, as a matter of fact very far from it, heheh. But I'd still give you one advice (ahem, have learned the hard way!). Do it your own way. Pick the sleeves open and see how they are done, then do the work as it is easiest for you to do, it does not have to be the way the tailor has done it! After all, the seams will be inside the sleeves.
