It has to be good quality mince (ground beef ideally) - say 1lb. And make sure you do it in kitchenware that can go in the oven with lid - like le crusete/casserole dish.
Three finely chopper onions, 3 cloves garlic, 3 hot chillies (chopped with seeds), 3 teaspoons chillie powder, around 2 tablespoons ground cummin, 1/2 bottle not too cheap red wine, 2 whole nutmeg (freshly ground - by you!), 2 cans plum tomatoes, 1 can kidney beans.
Fry onions and garlic in a good amount of olive oil. Add the chillies, chillie powder, cummin, nutmeg and some salt. Add beef and make sure you break it all up so there are no lumps. Add tomatoes and break them up, then wine and kidney beans. Stir it all in and add some pepper and more salt if it needs it. Then put it in the oven for about 1.5 hours on low heat at around 150-160 (2 hours at 140-150 is better.)
Just like a good home cooked curry it always tastes even better heated up the next day !
