Often the flight path will be modified to avoid the jet stream headwinds or take advantage of the tailwind which can sometimes be as much as 125 mph. Years ago I was on a flight from Narita to O'Hare that set the record for fastest flight (9 hr 45 min). I didn't help any though, just a longer wait for the connecting flight!
