We know these are rituals because the same poses and similar scenes (the differences are minor, such as the items on the offering table) show up in many other tombs. In these many (many!) examples, the hieroglyphs describe the scenes... so the two different photos in the article that show people in front of a cow contains hieroglyphs with the name of the tomb owner, his wife, and others, and text that says something like "worshiping Hathor" or "shaking the sistrum for Hathor."

So... they tell us what they're doing. You can grab a dictionary and puzzle out the words for yourself if you like.
