It's just a lack of familiarity with things, really. The media and popular culture focuses on "mind-bending things in the pyramids" (while ignoring other things that the Egyptians did and other structures.) And the common memes ("we can't duplicate the GP", etc) - as inaccurate as they are, most people seem to simply accept them and brush off any inaccuracies (like the fact that most of it in the GP looks unfinished when compared to Djoser or even Unas.)
They'd been doing some sophisticated stonework like the bowls since the preDynastic.
