The general picture is that it was in the upper mesopotamian valley towards central Turkey that agriculture of grains on a deliberate scale first took place - 11-9KBC
One point someone made was - they had to be really really hungry to start eating grass....perhaps due to a famine? disease in livestock?
But once they did - first in the form of a porridge, later as a bread, it provided a means to create permanenet settlements, in fact, it demanded permamnant storage facitilies.
Catal Huyuk and the areas around is where the grains that are used most everywhere originated.
Check out the Natufian culture which is thought to have preceded them.
