I'm aware of those layer and quartz vein structures sometimes seen spanning multiple blocks. That's indeed still some mystery and so far the only direct potential physical invalidation of the poured-in-place theory I'm aware of. But if you see how layers and veins can be reproduced quickly in the lab within sand / water mixtures by running a DC current through it. That means those layers and veins could have been produced by nature during the curing/hardening process inside the wall.

One major point against the veins-in-the-quarry is the fact that in some limestone blocks and even more in granite blocks you can see how the thickness of the cut which is usually removed by the stone saw, has to be thinner than 1mm. And that's even today with industrial stone saws impossible to achieve and only possible with specialized technology for low volume production.
