In general (or on my part) it's because of the lack of supporting evidence from the Old Kingdom. What's offered is Ptolemaic era for the most part, and that's thousands of years after the first cubit rod shows up.

Building something based on mathematics makes little sense.
Building it on engineering and the amount of effort/work to haul and place stone along with structural stability makes more sense. We know that a number of different plans were tired.
